Yumm Yumm Muffin Recipe For You

Oh boy do I have a wonderful recipe for you. It's fast, simple, and turns out a muffin that makes you look like you got it going on! And what is nicer than having a bunch of sincere compliments over something you just whipped up? June Cleaver look out.......


Hugs and Kisses Easy Peasy Cranberry and Orange Muffins
1 3/4 cups all-purpose flour
1/2 cup sugar
2 teaspoons baking powder
1 beaten egg
1 cup butter milk
1/4 cup cooking oil
1 orange at least medium size
1 cup chopped cranberries


Put the first six ingredients in a mixing bowl. Mix well using a mixer at medium speed. Then chop your orange in half. Squeeze approximately 2-3 Tablespoons of the juice into the mixing bowl. Then grate the rind of the orange into the mixing bowl. **Important when grating do not grate the white part of the rind as this is the bitter part. Only use the orange color part of the rind.**

Chop your cranberries so that you have 1 cup total. I was so thankful that I have been given a chopper as a thank you from friends. I know that some have used a coffee grinder successfully. Oh, one more thing. It makes it so much easier when chopping if the cranberries are frozen.
Add these to the mixing bowl. Look how yummy and colorful this is:)

Using a rubber spatula gently mix in the cranberries. Your batter should be just a little like cake batter.

Line your muffin pan with paper baking liners. Spoon in the batter into each holder; about 3/4 of the way full. I tend to fill to the top the liner which results in not getting as many muffins. Which ever muffin holders are do not have batter fill with water. This will help in even baking or something like that. I heared that some where from a real baker and it sounds smart to me.
I timed myself to see how long this part would take and it was only 10 minutes - wow. This included putting away all the ingredients too:)

Bake at 400' for approximately 20 minutes. You should yield approximately 10-12 muffins.
